This mead is what we call a Cyser. This mead is made using local apple cider and caramelized local wildflower honey. The caramelized honey gives it rich notes of toffee and molasses. During development we really liked this combination, but thought it needed just a little extra in the aromatics department. So we decided to age it in whiskey barrels, because whiskey. What resulted is nothing short of spectacular. It is semi-sweet, with a bracing acidity from the apples, the rich toffee and molasses notes from the honey, and is layered with the vanillin and charred character from the barrels. It’s big and heavy and perfect for getting through that Midwestern Winter.
